Soup & Sandwich with Trader Joe’s

Happy Monday, friends! These cold temps have me wanting to curl up on the sofa, stay-in and binge watch Netflix. And what goes better with sofa and Netflix than soup and sandwiches? All that comes in mind is chocolate. Who’s with me? But I’m getting off track. Today’s recipe is all about soup & sandwich with Trader Joe’s.

The cold temps inspired today’s recipe but I also thought we were long overdue for a recipe. Recipes come in all shapes and sizes. Some recipes require long shopping lists and some require hours in the kitchen. But today is not one of those times…today is all about a quick throw together meal.

The tasty ingredients for this combo were found while walking the aisles of Trader Joe’s but I’m sure you can easily duplicate this from goodies found from almost any grocery store. You might even find something that inspires you even more.

So let’s get to the good stuff…

Soup & Sandwich with Trader Joe’s

Shopping List:

Not Your Ordinary Grilled Cheese

  • Fig butter
  • Sourdough bread
  • Butter
  • Sharp cheddar cheese slices

Butter one side of each slice of bread. Place on a skillet. Next, add 2 slices of cheese. Spread fig butter on the other slice of bread and add to the sandwich. Basically you are going to prepare it just as you would a grilled cheese but you add the fig butter. It adds a fun flavor to the sandwich and plays well with the sharp cheddar cheese. Think savory and sweet.

I got this idea from The Everygirl but they called for brie instead of sharp cheddar. I think you could experiment and use almost any cheese.

Creamy Corn & Roasted Pepper Soup

  • Trader Joe’s Creamy Corn & Roasted Pepper Soup
  • Trader Joe’s Roasted Corn
  • Black Beans
  • Shredded Cheese
  • Taco seasoning

Heat one container of Creamy Corn & Roasted Pepper soup in a saucepan. Add 2/3 cup of roasted corn and 2/3 cup of black beans. Next, add 2 tsp of taco seasoning or more if you so desire.

Serve in a bowl with a little shredded cheese & cilantro on top, if so desired.
