Happy Friday! Another Five Fab Finds: Trader Joe’s but today’s finds come together to make a meal. I saw someone talking about this balsamic glaze from Trader Joe’s so it inspired me to create a chicken bruschetta pasta. In the past, I’ve always made my own balsamic glaze, but hey…if we can simplify the process then why not.
I was also going to prepare my own chicken but then this grilled balsamic vinegar and rosemary chicken caught my eye…can you say YUM. It sounded good at the store so I figured it was worth a try. And it does not disappoint. It’s very tasty and it’s already prepared so you just have to warm it up which is great when you are short on time. I highly recommend.
So there’s nothing earth-shattering about this week’s five fab finds, well other than this chocolate salted caramel mug mix. Chocolate + salted caramel I’m not sure if there are two words that I like more…well besides McDonald’s coke or maybe Anthropologie sale. (They are having a big sale right now by the way.) Ok well…when it comes to food or should we say dessert. P.S. It’s pretty tasty. I like that it’s packaged in single servings and satisfies my sweet tooth. Obviously, the bites with ooey gooey caramel are the best.
My Chicken Bruschetta Pasta
So I looked at a few recipes online to give me inspiration but I improvised a bit.
Ingredients:
- Angel Hair Pasta (I used about 1/2 lb.)
- Tomato Sauce (I used about 1/2 cup).
- 3-4 Roma tomatoes (you can use canned) (note: I used 3 tomatoes but I think next time I’ll use a few more. Depends on your feelings towards tomatoes.)
- Olive Oil
- Garlic Cloves (minced)
- Salt & pepper
- Fresh basil (about 5 leaves)
- Trader Joe’s Balsamic Glaze (garnish on top)
- Trader Joe’s Balsamic Vinegar and Rosemary chicken (I just used one huge chicken breast.)
Directions:
- Tomato salad: (Step 1) Wash, core & dice tomatoes into 1/4 pcs, save juices and place in a small bowl. Wash, dry & cut basil leaves into thin strips. Combine tomatoes, basil, 1 Tbsp olive oil, salt & pepper, & 1 garlic clove minced and place in the fridge for about 2 hours before next step.
- Tomato salad: (step 2) Heat saucepan and add 1 Tbsp olive oil, heat oil for 20 seconds. Saute garlic cloves (2 or 1 tsp — I buy the minced garlic in a giant jar from Costco) for about 45 seconds until soft but don’t let it brown. Increase heat & add tomato salad and stir.
- Tomato salad: (Step 3) Add plain tomato sauce to the pan and bring to a boil. Add pasta to the saucepan and toss with fresh sauce (coat the pasta with sauce).
- Dish up the pasta on individual plates or a serving bowl. Serve & garnish with balsamic glaze.
- Chicken: Cut chicken breast on a bias and place on top of the pasta.
- Note: I garnished with fresh basil, balsamic glaze, and parmesan cheese.
A very simple recipe but it was very tasty. The balsamic glaze was amazing. It tastes just like homemade and it so so easy. This was an easy throw-together meal well besides letting the tomato salad chill in the fridge for 2 hours.

This was pretty tasty. It takes 40 seconds in the microwave so it’s a quick dessert option. Great to have on hand to satisfy that pesky sweet tooth.
P.S. The flowers are also from Trader Joe’s. They have the best flowers and at such a good price point. I like to get a bouquet every time I go.
