Recipe: Quick Weeknight Dinner

Some nights I just don’t feel like cooking an elaborate meal; I want easy. Every week my goal is to do meal prep and grocery shopping on Sunday’s but that didn’t happen this week, so I’m rummaging around trying to decide what to eat for dinner. And of course nothing sounds good.

Perusing the pantry to see if anything jumps out at me….

And then it comes to me. I’ll make an oldie but a goodie. Quick Black Beans & Rice. I can’t take credit for this. This recipe has been in my recipe book since 2002, so unfortunately I can’t give credit to where it came from. But thank you to it’s creator.

Quick Black Beans & Rice

  • 1 Tbsp olive oil
  • 1 medium onion, chopped (I usually just use half an onion.)
  • 1 can (15 ounces) black beans, undrained
  • 1 can (10 ounces) Rotel, undrained
  • 1 tsp dried oregano leaves
  • 1/2 tsp garlic Powder
  • 1 1/2 c. Rice (uncooked) ****

Directions:

In large saucepan, heat oil over medium-high heat. Add onion; cook and stir until tender. Add beans, tomatoes, oregano, and garlic powder. Bring to a boil; stir in rice. (****I cook my rice separately. I couldn’t tell you why, but that’s how I’ve always done it. Guess it allows me to decide how much rice I want to eat. ) Stir occasionally.

Cover; reduce heat and simmer 5 minutes. Remove from heat; let stand for 5 minutes before serving.

Tip:

I use this rice cooker from Pampered Chef to cook my rice. It’s fast and easy and you end up with perfect, fluffy rice.
