Lemon-Poppy Seed Waffles with Blackberry Maple Syrup

Father’s Day is right around the corner and I wanted to do something special for my dad. So I searched for the perfect recipes to build a great brunch menu. I tested a few different recipes before deciding on the final menu. It’s a cook’s job to taste test before she serves food to guests, right?

I ultimately decided to combine 2 recipes together to get the perfect Lemon-Poppy Seed Waffles with Blackberry Maple Syrup with a side of brown sugar glazed jalapeño bacon.

Lemon-Poppy Seed Waffles

  • 1 1/2 cups all-purpose flour
  • 6 tablespoons sugar
  • 2 tablespoons poppy seeds
  • 1 1/2 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 3 large eggs
  • 1 1/4 cups buttermilk
  • 1/4 cup (1/2 stick) unsalted butter, melted
  • 1 tablespoon grated lemon peel

Directions:

  1. Whisk first 6 ingredients in large bowl to blend. Whisk eggs, buttermilk, melted butter, and lemon peel in a small bowl to blend. Add buttermilk mixture all at once to flour mixture and whisk until just blended. Let mixture stand 15 minutes.
  2. Preheat waffle iron according to manufacturer’s instructions. Spoon batter onto the waffle iron. Cover and cook until golden and cooked through, about 7 minutes (cooking time will vary, depending on waffle iron). Repeat with remaining batter. Serve immediately with warm blackberry maple sauce.

Blackberry Maple Syrup

  • 1/2 cup maple syrup
  • 1 (12 oz) package frozen blackberries, thawed
  • 1 tsp lemon zest
  • 2 tsp fresh lemon juice

Directions:

  1. Combine maple syrup, blackberries, 1 tsp lemon zest, and lemon juice in a medium bowl. Warm in the microwave, if desired. Serve with waffles.

Brown Sugar Glazed Jalapeño Bacon

  • Jalapeno Bacon from HEB (1 lb)
  • 1/3 cup packed golden brown sugar
  1. Position 1 rack on the top third of the oven and preheat to 400°F. Line large rimmed baking sheet with foil. Place large rack on the lined baking sheet. Arrange bacon slices in a single layer on rack. Sprinkle brown sugar evenly over. Bake until bacon is crisp and glazed, 15 to 18 minutes. Cool 5 minutes and serve.

As I mentioned earlier, I taste tested this to make sure it was right for Father’s Day. Needless to say, my dad is going to love it!

This dish would be great to make and serve for Father’s Day or Mother’s Day or just a weekend brunch at home. If you are expecting house guests, I would recommend making this although they may not want to leave after eating this tasty dish.
