Pumpkin Spice Loaf

Confession: I am not a fan of Pumpkin Spice Lattes or any Fall inspired coffee drink. I’m just not a coffee drinker. But pastries….pastries and anything like that…that I like. So today I’m sharing a recipe I came across a few years back for Pumpkin Spice Loaf. It’s very similar to the pumpkin bread you get at Starbucks.

Ingredients:

Note: This makes 2 loaves of bread.

  • 1 cup margarine
  • 3 cups of sugar
  • 4 eggs
  • 3 1/3 cup flour
  • 2 tsp baking soda
  • 1/2 tsp baking powder
  • 1 1/2 tsp salt
  • 1 tsp cinnamon
  • 1 tsp nutmeg
  • 4 tsp ginger
  • 1/2 tsp cloves
  • 2/3 cup water
  • 1 cup nuts (optional)
  • 2 cups canned pumpkin

Directions:

  1. Cream together margarine, sugar, and eggs.
  2. Combine all dry ingredients and add to the creamed mixture alternately with water and pumpkin.
  3. Beat well
  4. Pour into 2 greased loaf pans or makes 24 muffins
  5. Bake at 350 for 55-60 min

This time I decided to use a pumpkin mold to make individual treats.

And then I couldn’t just let the pumpkin bread stand on its own. I needed to add edible acorns.

These acorns are so easy to make. You just need a few ingredients.

  • Mini Nutter Butters
  • Hershey’s Kisses
  • Peanut Butter
  • Chocolate Chips

You simply take a Nutter Butter and put a little peanut butter on one side and then you attach a Hershey Kiss. On the other side, put a small dot of peanut butter and attach a chocolate chip. And voila you have edible acorns.

My mom and I actually made these about 3 years ago for my sister-in-law’s baby shower. It was forest animal themed so these acorns were the perfect accompaniment.
