Salads I’m Currently Loving

I would guess that I’m not alone in the quest for great new recipes. And I’m sure I’m not the only one that is always on the hunt for healthy recipes.

Trying new foods and recipes has always been a favorite of mine. But I’m especially always trying to find great things to have for lunch. I’m always searching for great dishes that I can prepare in advance and have ready for lunch for the week. So today I wanted to share a few recipes for the salads I’m currently loving.

Copycat Chick-Fil-A Superfood Salad

When I say Chick-Fil-A you probably aren’t thinking salad. I know when someone first mentioned the tasty salad from Chick-Fil-A I didn’t know what they were talking about. I mean I go there for chicken nuggets and waffle fries. How about you?

But they do have this really tasty Super Foods Salad with a delicious dressing.

My search began to find a copycat recipe. I wish I could take credit for creating this recipe but I can’t. But I can say that I found it and made it. I mean someone has to be the taste tester after all, right?

Vinaigrette Ingredients:

  • 1/3 cup Apple Cider Vinegar
  • 1 green onion trimmed
  • 1 tsp Creole or mild coarse grain mustard
  • 1 tsp salt
  • A few cracks of fresh ground pepper
  • 2/3 cup real maple syrup
  • 1/2 cup extra virgin olive oil

Salad Ingredients:

  • 4 cups of broccoli broken into small pieces
  • 8-10 cups of kale, massaged

Toppings:

This is where I strayed from the recipe. I love the Dried Cranberries & Glazed walnuts.

  1. In the jar of your blender, combine the vinegar, onion, mustard, salt, pepper, and maple syrup. Blend until smooth. With the blender running, slowly drizzle in the olive oil. Set aside.
  2. In a very large bowl, combine the broccoli, kale, cherries, and sunflower seeds. Drizzle about 3/4 of the dressing onto the salad and toss to coat evenly. Add more dressing if desired. Refrigerate for up to 24 hours.

My Notes:

I don’t drizzle the dressing on the entire salad. I have found that if I create my “salad” as I go that it keeps longer. I buy the chopped and ready to go kale and just pull out enough for a serving. Massage it, massage it, massage it and massage it a little more. Massaging is key when it comes to kale in my opinion. It can be very very bitter but if you massage it enough it gets rid of the bitter taste and the sweetness of this dressing really helps.

I place my desired amount kale in a bowl and add broccoli florets. Drizzle with dressing and top with the dried cranberries and walnut. And voila a tasty salad is served. Sometimes I add grilled chicken to it to make a complete meal.

Broccoli Salad

A while back I did a post of Georgetown and talked about having lunch at Laurie’s. This salad is the tasty Broccoli Salad that they serve there. This is one of my favorites.

Ingredients:

  • 1 bunch of broccoli, cut into small florets
  • 1/2 lb bacon (Note: The salad is still very tasty without this. I don’t always add the bacon.)
  • 1/4 cup golden raisins
  • 1/4 cup red onion, finely chopped
  • 1 cup mayonnaise
  • 2 tbsp vinegar
  • 1/4 cup sugar

Directions:

  • Mix mayo, vinegar, and sugar together to make the dressing
  • Mix broccoli, raisins, and red onions together. Pour enough dressing over broccoli to just coat the mixture.
  • Cover in the fridge and let marinate for several hours or overnight.
  • Just before serving, add bacon.

This was a new recipe for me to try. The other two I’ve made several times. But this one was very tasty and not your traditional salad.
