Spicy Cauliflower with Chicken

What’s cooking in my kitchen? Only one of my favorite go-to recipes…spicy cauliflower with chicken.

Sadly I can’t take total credit for this but I did make a few revisions to this to make a complete meal out of it. I add chicken to mine and serve it over rice and voila I have a meal. And it’s sooo good.

Spicy Cauliflower with Chicken

Ingredients:

  • 1 whole head cauliflower
  • 2 tsp olive oil
  • 2 garlic cloves, minced
  • 2 tbsp soy sauce
  • 1 whole lime
  • 2 whole green onions, sliced
  • 1 tbsp Sriracha (maybe more depending on how spicy you want it)
  • lime wedges for serving
  • 1-2 chicken breasts (cook in advance then chop into cubes)
  • Rice (cook in advance)

Directions:

  1. Firstly, break up the cauliflower into large florets, then, using your hands, break into very small florets. Meanwhile, heat a large, heavy skillet over medium-high to high heat and add the oil.
  2. Next up, add the cauliflower and garlic. Stir the cauliflower around the pan, allowing it to get very brown in some areas. Cook for 3 minutes, then turn heat to low. At this time, I add the chicken cubes. (Note: I cook my chicken in advance.)
  3. Add soy sauce, squeeze in the juice of the lime, and add most of the sliced green onion, reserving the rest for serving. Stir and allow to cook for 1 minute.
  4. After that, squeeze the hot sauce over the cauliflower. Stir until the hot sauce has been incorporated. You can add a little more hot sauce if you want a deeper color and flavor. 
  5. Rice. I usually cook about 1 cup of rice.
  6. Place the desired amount of rice in a bowl. Top with cauliflower and chicken mix.
  7. Garnish with remaining green onions and lime wedges.
  8. Squeeze more lime juice and Sriracha if desired.

This is one of my favorite recipes. It’s pretty easy to throw together and it’s definitely a recipe that you can prep for in advance. Cook chicken prior and chop all veggies prior.

I always cook my rice with my Pampered Chef rice cooker which makes the perfect fluffy rice. You can cook white or brown rice in this rice cooker. Get it here or here. It’s worth every penny. I’ve had mine for years. Never have to worry about burning the rice on the bottom or it getting sticky. (Oh…I may have forgotten to mention….you use this in the microwave. Cooking rice just got easier!)

P.S. My new favorite rice is Trader Joe’s Basmati Rice.
