Does anyone else ever walk the aisles of Trader Joes’ and before you know it your cart is full of all kinds of stuff? Well, I did that not too long ago and before I knew it there was a theme in my cart…Brunch with Trader Joe’s.
For those weekends that you want to stay in for brunch but want those mouth-watering treats, I’ve got you covered.
Grocery List:
- Hashbrowns
- Egg Frittata
- Peach Bellini Jam
- Brioche Bread
- Chocolate Croissants
- Almond Croissants
- Colombia Supremo Coffee
- Pain Au Lait Chocolate Chip
- Fruit
- Secco Bellini’s (4 flavors)
Corn Flake Crusted French Toast with Peach Bellini Glaze Recipe:
- 2-3 cups Corn Flakes
- 1/2 cup Brown Sugar
- 4 Eggs
- 1/2 cup Milk
- 1 tsp cinnamon
- 4 Tbsp butter
- Trader Joe’s Brioche Bread
- 1 cup Confectioners’ sugar, sifted
- 2 Tbsp Trader Joe’s Peach Bellini Jam
- 1 Tbsp Lemon Juice
- 1 1/2 Tbps Half & Half
Mix eggs, milk, and cinnamon together to create your egg mixture. Crush the 2-3 cups of corn flakes in a Ziploc bag. Melt 4 Tbsp of butter in a skillet, and add the brown sugar. Dip bread in egg mixture, dredge in corn flakes and add to skillet, cook until golden.
For the Glaze: Mix together 1.5 Tbsp half & half with 1 Tbsp lemon juice, 2 Tbsp Peach Bellini Jam and 1 cup of confectioner’s sugar. And voila you have your glaze.
Drizzle french toast with glaze and sprinkle a little confectioner’s sugar on top. (I added peach slices for garnish.)
1. Hashbrowns
These are pretty good. I cooked them in the oven, but next time I’ll fry them…I mean why not, right?
2. Egg Frittata
Very tasty. So easy and these have a great flavor. I’ll definitely get these again. This was my first time to have these and I was very impressed.
3. Peach Bellini Jam
So I just used this to make the glaze for the French Toast. I didn’t get a chance to try it on toast, but man did it make a good glaze.
4. Brioche Bread
Why use regular ole bread for your French Toast when you can use this Brioche bread. Believe me, it did not disappoint.
5. Chocolate Croissants & Almond Croissants
I’ve been enjoying these croissants for years. If you take your first bites when it’s fresh out of the oven, you’ll feel like you just stopped off at a bakery in Paris for a fresh croissant. These are frozen and the perfect thing to keep in your freezer for those mornings that you want a tasty pastry for breakfast. (Or a great snack with your afternoon coffee.)
6. Pain Au Lait Chocolate Chip
These are pretty good but I have to be honest…go with the croissants if you can only go with one.
7. Secco Bellini’s
TASTY! All I can say is TASTY! These are perfect for gatherings where you want a tasty, easy cocktail. They are $5 and there are 4 different flavors. And I’ve tried all 4. Please don’t make me choose my favorite. How’s a girl to choose between peach, mango, grapefruit and the newest flavor strawberry raspberry. These are perfect for brunch or if you are hosting a Bridal shower or a Baby shower where you plan to serve a cocktail. Run don’t walk to get these.
Thanks for stopping by. I hope this inspires you to host your own brunch and make it easy on yourself and let Trader Joe’s do the heavy lifting. The only menu item that required a little more effort was the french toast, but believe me…it’s worth the extra steps. You won’t regret making these. I thought I was at a restaurant when I bit into my first bite.
Enjoy! Happy Weekend!
